When I am short on time and am needing to get a healthy meal on the table quickly this Lentil Taco filling is one of the first recipes that comes to mind. There are only a few, simple, ingredients which all go into the same pressure pot to be cooked and served from. Then you only have a small amount of additional prep work to prepare the toppings of your choice to get a complete, family friendly, meal on the table.

One of the big considerations we have when looking for vegetarian meal ideas is if our kids will actually eat it. We have tried so many wonderful recipes that had too many complex flavors or textures that were off putting to our picky eaters. Or the recipes would required specialty ingredients which we do not normally keep on hand in our tiny kitchen. Thankfully, this simple Lentil Taco recipe satisfies everyone in the household and the kids love choosing their own toppings.
Lentil Tacos
Equipment
- Pressure Cooker
- Measuring Spoons
- Measuring Cup
Ingredients
- 1 Bag Brown Lentils
- 4 Cups Vegetable Broth
- ½ Cup Salsa
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Mexican Chili Powder
- 1 tsp Cumin
Instructions
- Add all of the ingredients to the pressure cooker and stir to combine.
- Close and lock the pressure cooker lid then set the pressure relief valve to the sealed position.
- Select the high pressure cook setting and set the timer for 15 minutes.
- Once the timer has finished allow the pot to natural pressure release for 15 minutes and then open the vent to relieve any remaining pressure.
- Open the lid, stir, and then allow the lentils to cool while you prepare your preferred taco toppings.
