Lentil Tacos
Lentils are a great meat replacement for ground beef. They are highly nutritious, have a similar consistency to ground beef and can be seasoned to suite almost any recipe. In this recipe we use Mexican spices to make a delicious, and easy, taco filling.

- 1 Bag Brown Lentils
- 4 Cups Vegetable Broth
- ½ Cup Salsa
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Mexican Chili Powder
- 1 tsp Cumin
Add all of the ingredients to the pressure cooker and stir to combine.
Close and lock the pressure cooker lid then set the pressure relief valve to the sealed position.
Select the high pressure cook setting and set the timer for 15 minutes.
Once the timer has finished allow the pot to natural pressure release for 15 minutes and then open the vent to relieve any remaining pressure.
Open the lid, stir, and then allow the lentils to cool while you prepare your preferred taco toppings.
The lentils will be a little loose when they first finish cooking, but will resemble ground beef once they have a chance to cool.
