Lentil Tacos

Lentils are a great meat replacement for ground beef. They are highly nutritious, have a similar consistency to ground beef and can be seasoned to suite almost any recipe. In this recipe we use Mexican spices to make a delicious, and easy, taco filling.

Equipment

  • Pressure Cooker
  • Measuring Spoons
  • Measuring Cup

Ingredients
  

  • 1 Bag Brown Lentils
  • 4 Cups Vegetable Broth
  • ½ Cup Salsa
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Mexican Chili Powder
  • 1 tsp Cumin

Instructions
 

  • Add all of the ingredients to the pressure cooker and stir to combine.

  • Close and lock the pressure cooker lid then set the pressure relief valve to the sealed position.
  • Select the high pressure cook setting and set the timer for 15 minutes.
  • Once the timer has finished allow the pot to natural pressure release for 15 minutes and then open the vent to relieve any remaining pressure.
  • Open the lid, stir, and then allow the lentils to cool while you prepare your preferred taco toppings.

Notes

The lentils will be a little loose when they first finish cooking, but will resemble ground beef once they have a chance to cool.
